When the pandemic hit Montreal, chef / owner Shawn Dascal of Baba Thai took it hard. His vision for the restaurant had been based around tasting menus, sharing platters, the magic of eating together. He'd worked hard to gain acceptance as an ambassador for Thai Cuisine - even earning official endorsement from the Thai Government - and he took the role seriously.

So Shawn opened his doors to what he calls "the dark web" of the food industry: his restaurant became a homebase for many Thai, Laotian and Cambodian homecooks selling their delicious family meals for delivery to be able to work in a health and safety certified kitchen with supervision from trained chefs, keeping customers safe and protecting these "ghost" restaurateurs from prosecution.During this special Lunch and Learn Even, Shawn will share his insights on the community that can exist between restaurants and ghost kitchens. We'll learn about how he came to fall in love with Thailand and it's cuisine, and how he deals with accusations of Cultural Appropriation. Plus! We'll learn how to make Thai Larb - both vegetarian and with meat - and he'll share some of the magic that goes into his amazing Chili Crisp sauce.
